Moms Talk: Some Great Summer Dishes

Answer from Mom’s Councilmember Julie (mother of 3): When we are looking for a quick and simple meal, we usually go for the pasta. I make it with our without sauce.   If it is a plain pasta, I usually put some olive oil and grated cheese on it and toss it with a vegetable.  Pizza is always an always a family favorite as well.  In the summer, the grill is out best friend. We grill anything from hot dogs, hamburgers, steaks or even chicken, and vegetables.

Answer from Mom’s Councilmember Denise (mother of 1): When I am looking for a quick and simple meal, I will make some whole wheat pasta or raviolis, which only takes less then 10 minutes.  I also try to prepare meals ahead of time if I know we have a busy day.  Another quick fix that I fin useful is that BJ's Wholesale Club sells Rotisserie chickens for under $6 so I stop to get one of those and make an easy side dish with some veggies to go with it.

Answer from Mom’s Councilmember Emily (mother of 2): When in need of a quick meal, I generally turn to one of three things: pasta, pizza, or quesadillas.  I buy the fresh tortellini and then store it in the freezer, and since we grow our own basil I make huge batches of pesto and freeze that as well. I'll pair it with a salad and we're good to go.  For the pizza, recently I've been using naan flatbread, drizzling with olive oil and topping with a little fresh garlic, tomato and basil and pre-shredded mozzarella. I throw it on the grill so I don't need to turn on the oven.  For the fastest quesadillas I heat up a can of black beans, a can of corn and some salsa or taco sauce (sometimes I'll throw leftover chicken in if we have it) and throw that mixture into a tortilla with cheese.  Then everyone can add on whatever they like (lettuce, sour cream, etc).
